3 to 4 carrot (or about 1 cup of baby carrots)
2 to 3 stalks of celery
1 small onion
2 sweet potatoes (or yams)
1 (32 oz.) can of low sodium/fat free chicken broth
2 to 3 c. water
3 skinned chicken breasts (on the bone)
1/2 tsp. of salt and pepper to taste
1 (12 oz.) box of small egg bow tie pasta

Take skin off chicken and rinse off, place in a large pot. Peel carrots and sweet potato; cut up into 1/4 inch pieces. Clean and cut-up celery into 1/4 inch pieces. Roughly chop-up onion and all of your vegetables to your pot. Add broth, water, salt and pepper. Place on medium heat and bring to a simmer. Once simmering, lower heat and place a tilted cover on top of pot. Let simmer for about 1 hour (make sure veggies are tender). Take off heat, remove chicken from pot, and shred your chicken off the bone. Sprinkle shredded chicken with some salt and pepper (if you like) and add back to your soup pot.
In a separate pot (at least 4qt) , fill 2/3 way with water and place on high heat to bring to a boil, add salt to water. Add your pasta and cook to box directions. Once you pasta is done, drain and set aside. Serve soup in bowls, by adding pasta and soup individually. Sprinkle some grated cheese (locatelli is what I use) and enjoy!

This recipe yields enough to serve 6 people. If you want, you can double the recipe and add about 45 mins to cooking time. You can then freeze whatever is left (not pasta, you should make that fresh) and have it for whenever you might need.
