2 c. flour
1/2 c instant Cappuccino powder, Vanilla flavor (any brand)
1 1/2 tsp. baking powder
1/4 tsp. salt
1/2 c. butter, softened
3/4 c. sugar
2 eggs
1 tsp. vanilla extract
1 c. chopped hazelnuts

Directions:
Directions:
Heat oven to 325º. Mix flour, cappuccino, baking powder and salt. Beat butter, sugar, eggs and vanilla in a large bowl with electric mixer on medium speed until well blended. Gradually beat in flour mixture. Stir in nuts. Divide dough into 2 equal portions; shape into 2 (14-inch) logs on a lightly floured surface. Place 2 inches apart on greased and floured cookie sheet. Bake 25 minutes or until lightly browned. Remove from cookie sheet. Cool 5 minutes. Cut logs diagonally into 3/4 inch slices. Place on cookie sheet 1/2 inch apart. Bake 10 minutes or until slightly dry. Makes 2 dozen.

These biscotti are delicious and so easy to make. I usually double the recipe. you can also substitute the Cappuccino and nuts for any ingredients that you may like. For example, I often do Peanut Butter and chocolate chips. Have fun baking :)
