1-2 T olive oil
1 med onion
1 large red pepper
2-3 cloves garlic
1 lb boneless skinless chicken, cubed
2.5 c cold water
1 c chicken broth
2 lb sweet potatoes, peeled and cubed
15 oz can cannellini beans, rinsed and drained
2 t chili powder
2 t cumin
1 t red pepper flakes
1 t cayenne pepper
2 oz canned green chilies, drained
toppings of choice: cheese, sour cream, chives

Directions:
Directions:
Sautée the onion, pepper, and garlic in the olive oil until just tender. Add chicken, sautée until opaque. Add everything else, bring to a boil, then reduce heat and simmer for 30 min. Top with ingredients of your choice: cheese, sour cream, chives. My favorite is feta cheese.

Simple to make vegetarian, too. Eliminate the chicken and switch to vegetable broth.

Quick, easy, and delicious. Sweet potatoes are really hard to cut - a food processor works wonders here. It's got a tasty kick. Add or decrease chilies and spices to fit your preferences or guests.
