3/4 cup milk
1 teaspoon vanilla
2 cups flour
2 cups sugar (1 brown, 1 granulated)
2 teaspoons of baking powder
1 teaspoon ground cinnamon
1 scant half cup of butter, softened, or lard

Directions:

Preheat oven to 350º F.

In a small bowl, beat together the eggs, milk and vanilla. Set aside.

In a medium bowl, mix together the flour, sugar, baking powder, cinnamon and butter to make a crumb mixture. Save 1/2 cup of the crumbs for the topping.

Stir the egg and milk mixture into the remaining crumb mixture. Butter or lightly coat with cooking spray, a 9" pie plate or 8" round or square baking pan. Pour batter into the pan and sprinkle the top with remaining 1/2 cup of crumbs.

Bake for 25 to 30 minutes until a toothpick inserted in the middle of the cake comes out clean. Serve warm or room temperature.

This recipe from my grandma, Katie Adams Sweigart (1884-1973), is so simple and delicious, and can be ready in 45 minutes for your family or guests. Especially good at breakfast.

I rewrote the original directions to make them clear, which were: "Beat 2 eggs, and add 3/4 cup milk. Stir into above flour mix. Pour into pan, top with 1/2 cup of crumbs. Bake 350° for 25 or 30 minutes until done." The original did not have vanilla and cinnamon, those were my additions.
