2 tbsp vegetable oil
1 medium sized onion, chopped
1 can spinach, drained or 10 oz frozen chopped spinach, thawed and drained
½ of a Green Bell Pepper
½ of a Red Bell Pepper
5 eggs, beaten
1 cup Swiss cheese, shredded
2 cups Muenster cheese, shredded
¼ tsp Salt and Black Pepper
Dash of Garlic Powder

Directions:

Preheat oven to 350 degrees

Lightly grease a 8 in X 8 in baking dish. (fyi: you can use any size but cook time changes, so you’ll have to really pay attention).

Heat oil in skillet over medium heat. Add onions and peppers and cook (don’t forget to stir!) until soft. Stir in spinach. Cook until mixture is less watery.

In a separate bowl, mix eggs, cheese, salt and pepper. Add the skillet mixture to bowl, mix!

Scoop mixture into baking dish.

Bake about 30 minutes, eggs should set. Let cool 10 to 15 mins before serving.

Note: You can add whatever you like or take out whatever you don’t like. I like to remove the peppers but add mushrooms to make a spinach mushroom quiche.
