1 c all purpose flour
1 tsp salt
1/2 tsp garlic powder
1/2 tsp cayenne pepper
]1/4 tsp black pepper
1 c butter
1/2 c hot sauce
1 lb chicken livers - soak in 1 c milk for an hour.
1 tsp paprika

375º oil temperature

Bring oil up to 375º in deep fryer or Dutch oven.

In a zip lock bag combine all dry ingredients.

drain off milk from soaking chicken livers, place in zip lock bag and gently coat livers, dusting each one.

In a small sauce pan melt butter and add hot sauce. turn heat off but keep warm.

Drop coated livers into hot oil 8 to 10 at a time cook for 10 to 12 minutes turning as needed for even cooking.

Drain livers on a paper towel lined baking sheet for 30 seconds, to remove any excess oil.

Drop fried livers into buffalo sauce mixture to coat - remove and plate.

Dip in a bowl of blue cheese dressing or ranch dressing.
