1 1/2 lb. chicken cutlets pounded very thin
Italian seasoned bread crumbs mixed with Panko bread crumbs
1 egg
1 c. milk or cream
1/4 c. grated pecorino Romano cheese or to taste
salt, pepper, garlic powder, parsley - to taste
couple bunches baby arugula
3-4 diced roma tomatoes
1 8 oz. jar roasted peppers, rinsed, drained and diced.
lemon zest
extra virgin olive oil
shaved Parmesan cheese

Beat egg with milk or cream , pecorino Romano and seasonings. In a separate bowl combine bread crumbs with panko. Dip chicken into egg mixture then into bread crumbs. Cover bottom of skillet with olive oil, heat to medium. Saute chicken cutlets until golden brown. Drain on paper towels. In separate bowl, toss arugula with tomatoes and roasted peppers. Season with salt, pepper, grated lemon zest to taste. Drizzle with extra virgin olive oil. Arrange cutlets in single layer on large platter , add arugula mixture, top with shaved Parmesan.

This is an easy dish that can be made ahead of time. Just keep the cutlets warm in the oven and when ready to serve, top with arugla mixture. Enjoy...
