1/2 lb. 85/15 ground turkey
3/4 tsp. sugar
1/4 red onion, cut julienne
1/4 tsp. garlic, minced
1 tbsp. fresh mint chopped
1tbsp. fresh Thai or regular basil
3 Thai chili peppers (NO SEEDS), minced
1tbsp. scallion, cut fine
1 1/2 oz. fresh lime juice
3/4 oz. fish sauce
1tbsp. chopped peanuts
1tbsp. fresh ginger, peeled, cut into julienne
cucumber, cabbage or lettuce to eat with

Directions:
Directions:
In a medium size pan cook the ground turkey on medium heat with a splash of water and cover to help steam it. Mixing often and cooking until 165º (until no more pink). Then strain off and discard any liquid. Let cool to room or refrigerator temp and add rest of ingredients and mix well. Serve with cucumber, cabbage or lettuce. We like to wrap these in our favorite lettuce leaves.
