1 egg per person
1/4 matzo meal per egg
Chicken fat (or a bit of oil)
Salt

Directions:
Directions:
Bring a large pot of water to boil
Separate eggs. Beat whites until stiff peaks form. Gently stir in the yolks. Add about 1/4 cup matzo meal per egg. Stir in until moistened. Add salt to taste. Add more meal if to runny. Mixture should hold a loose ball shape
Grease hands with chicken fat. Roll mixture into balls and drop into rapidly boiling water. Cover and reduce heat. Simmer for 20 minutes until balls are light and fluffy

Water needs to be boiling rapidly before you drop balls in. Don't peak after you cover and simmer
