Beef Rollups (Grandma Anna Baloun) Recipe

Ingredients: 1 1/2 lb Sirloin Tip sliced 1/8 to 1/4 thick 1 Onion diced 3 to 4 Slices of Bacon diced 1/2 c Beef Broth 1 c Sour Cream (or more to taste) Veg Oil Salt Pepper

Directions:Trim each slice of Sirloin into 3 triangles
Place one triangle pointing away from you on working surface. Cover long side with onion, bacon, salt and pepper now roll up towards the point and pin with a toothpick. Continue until all triangles are rolled.
Heat 1 Tbs oil in the bottom of a Pressure Cooker and brown 4 to 5 rolls at a time and set aside. (do not crowd)
Deglaze pan with Beef Broth.
Put rack in bottom of the Cooker, add all the rolls and any juices collected.
Seal the Pressure Cooker put over med heat and when the weight starts to bounce reduce heat to just maintain bounce and cook for 5 min.
Cool Cooker under cold running water.
Open Cooker and remove meat and rack.
Bring juice to boil reduce heat and add Sour Cream being careful not to let it catch.don't let boil again or sour ream will separate
Adjust seasoning add roll-ups back in the gravy and serve.
Best if served with Dumplings (See Pasta) and Cole slaw |
