2 c. all-purpose flour (Try mixing half white flour and half wheat)
4 tsp. baking powder
1/2 tsp. salt
2 T. granulated sugar
1 c. milk
2 eggs, beaten
3 T. melted butter, margarine or shortening

Directions:
Directions:
1. Preheat oven to 400º. Lightly grease a muffin tin.
2. In a large bowl, sift together flour, baking powder, salt and sugar. Make a well in the center.
3. In another bowl, combine milk, beaten eggs and melted butter. Pour mixture into dry ingredients. Mix just until blended, no more than 15 to 20 strokes. Do not over-mix.
4. Spoon batter into prepared muffin tin. Bake in preheated oven for 15 to 18 minutes, or until golden brown.

You can add different ingredients to this recipe to liven it up: for example, you could add 1 tsp. of cinnamon or other spices, dried or fresh fruit, nuts, or a little cheese.
