For the pie pastry:
2 c. flour (try mixing half wheat & half white flour)
1/3 c. butter
1/3 c. shortening
cold water

For the filling:
2 c. spinach, chopped (you can use broccoli or rhubarb instead, if you like)
1 c. cheese (any cheese will work for this recipe)
pinch of nutmeg, pepper & salt
3 eggs

Directions:
Directions:
1. Preheat oven to 375º.
2. Sift flour. Cut or rub in butter and shortening until mixture resembles bread crumbs.
3. Add enough cold water to form a soft but not sticky dough. Wrap & chill for 15 minutes.
4. Roll out dough and line pie dish.
5. Combine the filling ingredients, mixing well. Pour filling into pie pastry and bake for 30 to 40 minutes.

If you like, you can also add things like meat, carrots, cooked corn kernels, mushrooms or whatever you want to!
