2 tbsp. lemon juice
2 tbsp. Dijon Mustard
2 tbsp. fresh Cilantro, chopped
2 tbsp. fresh Basil, chopped
1 tbsp. garlic, minced
1 tsp. whole coriander, toasted and then ground
1/4 c. mayonnaise
1/4 c. Mire Poix, sweat lightly
1 c. panko (Japanese bread crumbs)
2 lb. dungeness crabmeat
1 whole egg
Pepper to taste

Directions:
Directions:
Mix all ingredients except the Crabmeat, then gently fold in the Crabmeat, be careful not to break it up. Weigh Crab Cakes at 3 oz. Then mold them, and coat them with Japanese bread crumbs. In a large pan Saute in olive oil and butter till golden brown. Once you have Sautéed all your Crab Cakes, Place on a greased baking sheet and finish in a 400 º over for 10 minutes.
