1 lb. smoked sausage, sliced
1 medium onion, chopped
2 T. canola oil
2 cans (15 oz. each) pinto beans, rinsed and drained
1 1/2 c. water
1 can (14 1/2 oz.) diced tomatoes with mild green chilies, undrained
1 T. ranch salad dressing mix
2 c. uncooked instant rice

Directions:
Directions:
1. In a Dutch oven, cook sausage and onion in oil over medium heat until onion is tender. Add the beans, water, tomatoes and salad dressing mix.
2. Bring to a boil; stir in rice.
3. Reduce heat; cover and simmer for 5 minutes or until rice is tender.
