3 lbs. uncooked chicken, chopped into bite size pieces
Olive Oil
4 tbsp. butter
1 potato, chopped
4-6 carrots, chopped (can use whole package)
1 large onion, chopped
4-6 celery stalks, chopped (can use whole package)
1 bay leaf
1-2 tsp. poultry seasoning
4 tbsp. flour (2 small handfuls)
1.5 qt. chicken broth (1.5 containers)
2 c. bisquick mix
2/3 c. milk
handful of fresh parsley, chopped (optional)
1 box frozen green peas
Salt & Pepper

In a large soup pot over medium-high heat, add olive oil (2-3 turns of the pot), butter, carrots, potato, onion, celery and bay leaf. Cook about 10 minutes, stirring often. Add poultry seasoning, salt & pepper. Add flour to the mixture and cook for another 5 minutes. Add the chicken broth/stock to the pot and bring to a boil. Add chicken to the broth and stir. While the chicken cooks, prepare the dumplings: Combine the bisquick, milk and parsley in a bowl. Mix well. Drop small spoonfuls into the pot and make sure to separate them. Once all dumplings are in the pot, mix well and flip the dumplings. Add frozen peas to the pot. Cover and allow to cook on medium for 10-15 minutes. Remove cover and cook on low for another 5-10 minutes to thicken. The longer you let it cook, the thicker and more flavorful it will be!

This a warm, comforting meal in a pot! The recipe is large and will allow for plenty of leftovers. My family and I have this meal at least once a week during the winter. Enjoy!
