1 lb. sausage, browned and drained
10 slices bacon, cooked crisp and crumbled
1 cup sliced ham, slightly browned
15 oz. frozen shredded potatoes
½ cup onions, chopped
½ cup green peppers, chopped
8-12 oz. cheddar cheese, shredded
15 eggs
¾ c milk
½ c sour cream
Salt & Pepper to taste

Coat a medium frying pan with a light layer of cooking oil, add frozen potatoes. Fry until lightly browned. In a small pan, lightly sauté the onions and green pepper in oil until tender.

Spray a 13 x 9 pan with a light coat of cooking spray. Layer the potatoes in the bottom of the pan, lightly salt and pepper. Sprinkle a light layer of cheese on top of the potatoes. Add meat, onions and peppers and 1 ½ cups of cheese on top.

Whisk eggs, milk and sour cream until blended. Pour over the prepared layers. Bake at 350º for 40 minutes, or until lightly brown on top. Sprinkle with ½ cup cheese and cook for about 5 minutes more, until the cheese melts.
