2 1/2 cups oats
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 cup margarine
1 cup sugar
1 cup light brown sugar
1/2 cup creamy peanut butter
2 large eggs
2 tsp. vanilla extract
2 cups semi-sweet chocolate chips
1 1/2 cups chopped walnuts
1 cup flaked coconut
1 cup raisins

Preheat over to 350º
Place oats in a food processor and pulse until oats are finely ground. Add flour, baking powder, baking soda, salt and blend well. Set aside.
In a mixer, blend margarine and sugars until creamy. Add peanut butter, eggs and vanilla and mix well. Add flour and oat mixture and mix until well incorporated, then add remaining ingredients and mix well.
Drop by rounded tablespoons onto cookie sheets sprayed with nonstick coating. Bake for 10 to 13 minutes, until light golden brown. Let cool on cookie sheets so cookies will have a crispy bottom.
