4 chicken breasts, poached and chopped in bite-size pieces (save broth to cook spaghetti)
1 C chopped onion
2 T chopped bell pepper
1/2 C sliced mushrooms
1 can diced petite tomatores, drained
1 can cream of chicken soup
1 12 oz pkg spaghetti (cook spaghetti in broth from poached chicken+ a large can or two of additional broth...optional but so much better than plain water)
1 1/2 C shredded cheddar cheese
1/2 C sliced olives with pimiento

Directions:
Directions:
Saute onion, peppers, and mushrooms in a little oil till tender but not browned. Mix together tomatoes, cooked spaghetti, 3/4 C cheese, soup, and olives. Place in greased casserole and sprinkle with remaining cheese. Bake at 350 for about 30 minutes...and nicely browned on top.

A fairly simple chicken spaghetti recipe...good flavor and it freezes well. I often use bow-tie pasta which is easier to serve and eat. It also freezes well...I usually divide it between 2 smaller casseroles.
