Ingredients: 1 1/2 tbs. Flower 1 1/2 C. Milk 4 tbs. Butter + 1 tbs. Salt to taste (Lowerys Season Sale is a nice variation) 1 Lemon, Juice of or to taste 2 tsp. Black Pepper, Fresh Ground 2 Packages of Buddig's Dried Beef, chopped 4 Bay's English Muffins - Use only Bays-Toasted

Directions:Split, butter and toast your English Muffins. Keep warm. Chop your dried beef. Set aside.
Make a basic white sauce. In a medium sauce pan over medium heat melt 4 tbs. butter and add the flower until you have a smooth paste (do not brown). Turn up heat to medium high. Slowly whisk in the milk whisking constantly until incorporated and smooth thickened. You should bring the sauce to a boil to fully incorporate the flower into the sauce.
Add your salt, pepper and lemon juice. Stir in and simmer at very low heat for about three to five minutes to incorporate the pepper flavors into the sauce. Be careful not to dry out the sauce. You can add a touch of milk to keep the consistency right. Adjust your seasonings to your taste, more salt or lemon juice etc. Stir in the chopped dried beef. Mix well until heated. Serve over the toasted English muffins, two half's per serving and serve immediately. |

Notes: I love this dish and so does my daughter Marie. I am pretty sure she would eat it every day of the week if she could! There are a few tricks. First...Use ONLY Bays English Muffins. Nothing else. All the rest suck and they do not have the unique flavor of Bay's that makes this dish delicious.
About the beef. Buddig's has been around forever but it is starting to get hard to find. I think the chain grocery stores are private labeling their own beef. Most any will work just fine BUT....Be careful for the dried beef that comes in a jar. It is SUPER SALTY and will not work. Always get the beef in the plastic pouch found with the sliced meats in the deli section of your grocery store. Enjoy!
