6 eggs cold water to cover 1 inch. bring to boil, remove from heat and cover for 12 min.

1/3 c. mayo and creme fraiche together to make 1/3 c.
1 t. lemon juice
1 t. dijon
1/2 t. salt 1/2 t. pepper
1/2 t. cumin.
chipotle powder to dust
pickled jalapeno to top

Remove yolks and mash.
Add ingredients and mix. Put into egg white halves. Dust with chipotle powder. Top with jalapeno slice if desired

Could make basic egg and add 1/2 t. Old Bay and 1/2 c. lump crab. Top with chives

Or 1-2 t. wasabi paste and sprinkle with 1 t. black sesame seeds
