2 3/4 c flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 c butter
1 1/2 c white sugar
1 egg
1/2 tsp vanilla extract
1 tsp lemon extract
3 Tbsp lemon juice
zest of 2 lemons
1/2 c white sugar for rolling cookies in or use powder sugar

In a small bowl, whisk together, flour, baking soda, baking powder and salt. In another small bowl combine sugar and lemon zest (this allows the sugar to absorb the lemon flavor and adds a bit of color to the cookies).

In mixing bowl, add butter and sugar/lemon zest, mix on medium speed for 3-4 minutes until butter becomes light and fluffy. Beat in egg, juice and extracts. Slowly add flour mixture to batter, stir until combined.

Depending on the size of cookie you want, use a medium/large scoop to shape cookies into balls. Roll dough ball in sugar and place on cookie sheet covered with parchment paper. Flatten slightly. Do not place too close together.

Bake at 350 º for 8-10 minutes. Edges will be slightly browned. Cool on cookie sheet for 2 minutes before removing to wire rack to cool.
