1 T BUTTER
1 T OLIVE OIL
2 c ONION (finely chopped)
2 cloves GARLIC (crushed)

BOURBON SAUCE:

1/2 c MOLASSES
1/4 c RED WINE VINEGAR
1 tsp MUSTARD (dry)
1/4 tsp BLACK PEPPER (fresh ground)
2 T LEMON JUICE
1/2 tsp LEMON ZEST (grated)
1 T SOY SAUCE
1 T PAPRIKA
1/3 c BOURBON WHISKEY

12 SHRIMP (peeled & deveined)



Directions:
Directions:
In a L Heavy Saucepan Melt Butter and Oil
Saute Onions until Tender
Add Garlic & cook 2 min longer

Rub MAHI MAHI w/CAJUN SPICE MIX*
Brush both sides of MAHI MAHI w/Canola Oil
Cook Fish for 2 minutes directly on Grill & rotate 1/4 Turn w/o Flipping
Cook for 5 min longer on same side
Flip Fish & Cook 5 min Longer or until Fish is Firm to the touch

Add 6 Shrimp for each Mahi Mahi

Season Shrimp w/Cajun Spice Mix
Grill 1-2 min per side
Best when grilled on Kebob

When Mahi Mahi & Shrimp are done Pour the Bourbon Sauce over it & serve w/Mashed Potatoes
