chorizo sausage (skin removed)
2 cups Oaxaca (or any low fat white cheese like mozzarella), grated
1 medium onion, chopped
1 clove garlic, finely chopped
1 tbsp olive oil
tortilla chips or burrito shells
optional: jalapeno peppers to taste, chopped finely

In a heavy skillet, cook the chorizo sausage at relatively high heat. Remember to take the skin off. Keep it moving because it will stick. Remove the sausage to a paper towel to drain excess fat. In the same skillet as you cooked the chorizo sausage, cook chopped onions and garlic (and jalapenos if desired). Add a little olive oil and scrape the dark bits from the bottom of the pan for flavour.

Grease an oven proof pan and preheat the oven to 350ºF. Layer the cheese and chorizo sausage twice, making sure the top layer is cheese. Cook until the cheese is melted and crispy. Serve hot with tortilla chips or lightly toasted burrito shells. Make into mini burritos or use as a dip with tortilla chips.

Serving suggestion: Salt the rim of a beer mug—add crushed chilies to the salt if desired. Serve beer on ice with fresh lime juice.
