3 c. milk
1/2 c. rice
2 eggs
3/4 c. sugar
1/2 tsp. salt
1/4 c. lemon juice
2 tsp. grated lemon rind
1/8 tsp. cream of tartar

Directions:
Directions:
Scald milk in top of double boiler over low heat. Add well washed rice slowly. Cook, stirring often until rice is tender (about 30 minutes). Separate egg whites and egg yolks. Beat egg yolks and add 1/2 cup of the sugar, the salt, lemon juice and lemon rind. Beat until well blended. Then add the egg yolk mixture to the hot rice. Mix well and pour into a greased baking dish.

Beat egg whites until frothy. Then add cream of tartar and the remaining 1/4 c. sugar gradually and beat until mixture forms peaks. Spread on top of rice. Bake in a 325º oven for 15-20 minutes or until lightly browned.
