2 Cups Green Lima Beans, cooked and
drained (or used canned limas)
2 Cups Large Limas, cooked and
drained (may use canned limas)
2 Cups Red Kidney Beans, cooked and
drained (may use canned)
1 Qt. Pork & Beans or leftover baked beans
6 Slices Bacon, diced
1-1/2 Cup Onions, chopped
3/4 Cup Brown Sugar
2 tsp. Salt
1 tsp. Dry Mustard
1 Clove Garlic, minced
1/2 Cup Vinegar, white
1/2 Cup Ketchup

Directions:
Directions:
Combine first 4 ingredients in a large casserole dish, reserving liquids. Fry bacon and drain off excess fat. Add onions and saute briefly. Add sugar, salt, mustard, garlic, vinegar and ketchup. Cook 5 minutes and pour over beans. Add enough reserved bean liquid to barely cover beans. Bake uncovered 1-1/2 hours at 325 degrees, adding additional liquid if beans become dry. Options: Substitute other varieties of dry beans, including soy, but keep color contrast for an attractive dish. Omit meat altogether - still delicious!
