6 granny smith apples peeled
6 gala apples peeled
1 tsp cinnamon
3/4 c granulated sugar
1/2 c butter
1 c packed brown sugar (light brown)
14 oz packaged ref pie crust
1 egg white
2 tbsp sugar

Directions:
Directions:
Cut peeled apples into 1/2 wedge slices.
Toss apples with cinnamon and 3/4 c sugar.
Melt butter in large cast iron skillet over med heat.
Add brown sugar and cook stirring constantly (1 to 2 min) until sugar is dissolved.
Remove from heat and put 1 pie crust in skillet over brown sugar mixture.
Spoon apple mixture over pie crust and top with remaining pie crust.
Whisk egg white until foamy.
Brush top of crust with egg white.
Sprinkle about 2 tbsp sugar and small amt of cinnamon over crust.
Cut 4 or 5 in top of crust.

Bake 1 hr 10 min until golden brown at 350
Cool on wire rack about 30 min
