3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoon baking powder
½ teaspoon nutmeg
½ cup butter, diced (softened, not melted)
1 cup superfine sugar
½ teaspoon vanilla
½ teaspoon almond extract
1 egg
½ cup heavy cream


Icing:

4 cups powdered sugar
2 Tablespoons softened butter
a little almond extract
3+Tablespoons of milk or half-and-half

Directions:
Directions:
Sift flour, baking soda, baking powder, and nutmeg into a bowl, swirl together with a wire whisk. With an electric mixer, cream together butter, sugar, vanilla, and almond extract until light and fluffy. Add the egg and beat to mix well. Add the flour mixture alternately with the cream into the butter mixture to make a soft dough. Cover with plastic wrap and chill for at least 30 minutes before handling. Preheat over to 350 degrees. Roll out the dough on a floured surface until ¼” thick. Cut out cookies with a floured cookie cutter. Transfer to UNgreased baking sheets. Bake for 9 – 10 minutes. Using a spatula, transfer cookies on to a wire rack to cool. Top with icing and enjoy.

Icing:
Add whatever coloring you want a very little at a time (use a toothpick and add just a “dot” to start and mix it together) as it is always easier to add more later. And it does darken a bit as it sets.
