2 lb pork loin roast
1 tbsp Cajun spice
2 tsp garlic powder
2 tbsp fresh cilantro leaves
Salt & Pepper to season

Tropical Salsa

1C. Jar of Apricot Jelly
1 /2 cup mango, diced
1/2 cup pineapple chopped
6 Maraschino cherries, chopped
1 tbsp. minced fresh jalapeño pepper.

Preheat oven to 325º season pork with all of the ingredients listed for pork above and rub it in. Let it rest 20 minutes. Spray roasting pan with nonstick cooking spray. Bake for 1 hour and 15 minutes. Once the roast is in the oven make the salad by cooking down the jelly and adding in the remaining fruits and jalapeño. Place into refrigerator, stirring every now in then too cool. Remove roast from oven when roasting time is up and allow to rest 10 minutes.

This is a tropical, sweet and savory dish with some heat. If the heat is undesired this dish can be prepared without the Cajun spice, and jalapeño. Just add bell pepper into the salsa. If you love a dish with lots of color this dish will not disappoint you.
