1 whole organic chicken
1 stalk celery
bunch of carrots
2 medium onions
5-6 cloves garlic
1/2 bunch Italian parsley
1 lb. small bows macaroni
2 boxes frozen chopped spinach thawed

Meatball Ingredients:
1 1/4 lbs. ground beef & pork
1 egg
1/4 c. grated pecorino Romano cheese or locatelli
seasoned Italian bread crumbs
1 egg beaten
salt
pepper
garlic powder
parsley

Directions:
Directions:
Place chicken in large pot (14-16 qt). Fill pot with cold water till about 3/4 full. Add celery, carrots, onion and garlic- no need to chop, vegetables will be pureed later to finish soup. Season liberally with coarse salt, black pepper. Bring soup to a boil, cover, simmer for 2 hours. While soup is cooking prepare meatballs. In a large bowl season meat liberally with salt, pepper, garlic powder, parsley and grated cheese. Add egg and bread crumbs. Mix thoroughly. Roll meat into small meatballs. Saute in olive oil. Put aside till soup is strained and pureed.
When soup is done and cooled down, strain. De-bone, skin and shred chicken. Puree celery, carrots, onions and garlic in small batches. Add pureed vegetables, thawed chopped spinach, shredded chicken, fried meatballs and cooked bows to broth. Adjust seasoning. Simmer on low for 30 minutes.
