4 thinly sliced, boneless, skinless chicken breasts
1 pkg. low sodium taco seasoning
1 1/2 c. fresh salsa
1/4 c. shredded cheese (optional),
1-4 dollops of non-fat sour cream (optional)
Olive oil spray

Directions:
Directions:
Preheat oven to 400º. Spray olive oil spray in baking pan and on each side of chicken breasts. Coat each side of the chicken with the taco seasoning, place in pan closely together. Pour the fresh salsa across the middle of the chicken. Bake for 15-20 minutes or until juices run clear (time will depend on how thick of a breast you use). WIth 5 minutes left to cook, pull chicken out and top with shredded cheese. Once melted, pull out and let cool for 5-10 minutes. Serve with a dollop of sour cream on top and your favorite side salad.
