Ingredients: 1 c. unsalted butter, room temperature 2 c. sugar 4 large eggs 3/4 c. Mountain Dew 1 lemon (juice and zest) 1 lime (juice and zest) 1 1/2 tsp. lemon extract 1 tbsp. orange extract 2 3/4 c. all-purpose flour 1 1/2 tsp. baking powder 1/4 tsp. salt
Icing 2 c. unsalted butter, room temperature 2 cans sweetened condensed milk 1 lemon (juice and zest) 1 lime (juice and zest) 2 tsp. orange extract 1 tsp. (until desired consistency) Mountain Dew

Directions:Preheat oven to 325º. Line cupcake pan with liners. Mix by hand in a medium bowl the flour, baking powder, and salt. In a separate bowl, whisk butter on medium speed until smooth and creamy. Add sugar, lemon and lime zest and juice. Beat until light and fluffy. Add eggs one at a time being sure to scrape the bowl between each egg. Slowly add dry ingredients and mix on low speed until well incorporated. Add Mountain Dew, orange and lemon extract. Mix until well combined. Fill cupcake tins 3/4 full. Bake for about 18-22 minutes or until toothpick comes out clean.
Icing Whisk butter on medium speed until creamy. Add 2 cans of sweetened condensed milk and whisk on medium speed until stiff consistency. It will take a while to thicken up but it will happen. Add juice and zest from lemon and lime, and orange extract. Mix well. Add Mountain Dew one teaspoon at a time until it is your desired consistency. |
