2 C flour
2 eggs at room temperature
a pinch of salt
2 -4 tsp water
2 tsp olive oil
2 cloves of fresh roasted garlic minced
3 sundried tomatoes, minced
3 large leafs Basil Minced.

Directions:
Directions:
Mix the flour and salt in a large mixing bowl. Add the garlic,tomato, and basil. Mix. Make a well in the flour, and crack eggs into the middle of well. Beat the eggs in the well and then add oil, and water (2 tsp first then 1 tsp at a time after if still too dry as you mix) start mixing egg mixture into the flour a little bit at a time. Mixture will seem very dry but add water until the dough becomes smooth and elastic like. Ball dough and wrap in plastic. allow to rest for 45 minutes at room temp. unwrap dough and flatten. dust both sides of dough with flour and begin running through pasta maker (roller). Keep dusting dough as needed so it will not stick to pasta roller. When dough is desired thickness you may cut into wide strips for lasagna or put on cutting attachment to pasta machine, and cut into linguine, fettuccine, spaghetti, etc.
boil water and cook pasta for about 2-4 minutes.

Fresh pasta is heavier and will fill you up much quicker. You do not have to add the tomatoes or the herbs if you perfer plain pasta. Also you do not need to use semolina flour, although it is suggested, white all purpose is fine. If you are looking for a pasta machine check out such stores as Ross's, Maurice's, or any kitchen specialty store. Kitchenaide also has attachments for their mixers.
