1 stick of salted butter, room temp
1 cup fine grained white sugar
2 eggs
1 tsp vanilla extract
1 ½ cups all purpose flour
1 tsp baking soda
½ tsp salt
½ cup sour cream
2 medium ripe bananas, mashed
½ cup chopped walnuts, optional
cinnamon sugar

Directions:

Preheat oven to 350 F. Spray loaf pan with BAKING spray. Dust bottom and sides with cinnamon sugar.

In large bowl, cream butter and sugar. Add eggs and vanilla, mix well. Combine flour, baking soda and salt, and stir into butter mixture until smooth. Fold in sour cream, walnuts, and bananas. Spread evenly into prepared pan.

Bake at 350 for 60 minutes. Check at 45 – if edges browning too quickly, reduce heat to 325. Toothpick inserted in center should come out clean. Cool in loaf pan for 10 minutes then move to wire rack to cool completely, or may serve SLIGHTLY warm. The longer it cools, the moister the bread will be, as steam stays in the bread.
