8 CHICKEN BREAST HALVES (boneless, skinless) (diced)
1/4 c SOY SAUCE
2 (8oz) CRUSHED PINEAPPLE
1/4 c OLIVE OIL
2 RED BELL PEPPER (diced)
2 ORANGE BELL PEPPER (diced)
8 CRIMINI MUSHROOMS (sliced)
6 cloves GARLIC (minced)
1/4 c GINGER (fresh minced)
1 T + 1 tsp BLACK BEAN SAUCE
2 tsp RED PEPPER (crushed)
SALT & PEPPER (to taste)

Directions:
Directions:
Combine Chicken, Soy & 1 can PIneapple.
Marinate Chicken for 20 min.
Remove Chicken & Strain Marinade reserving the juice (discard the Pineapple)

Heat Olive Oil in a Large Skillet on Med
Add Bell Peppers, Mushrooms, Garlic & Ginger.
Cook until garlic is Fragrant & Bell Peppers start to get Soft.
Stir in Chicken & cook until juices from the Chicken turn clear (approx 15 min)

Pour in Reserved Chicken Marinade, 1 can Pineapple w/Black Bean sauce & Crushed Rep Pepper.
Season w/Salt & Pepper & Simmer
