1 red pepper, finely chopped
1 yellow pepper, finely chopped
1 green pepper, finely chopped
1 small onion, chopped
1 can white shoepeg corn, drained
1 can black olives, chopped
1 can black beans, rinsed
1 can diced tomatoes
1 teaspoon salt
½ Tablespoon water
½ cup olive oil
¾ cup sugar
¾ cup apple cider vinegar

Directions:
Directions:
On the stove bring the following to a boil: salt, water, olive oil, sugar, apple cider vinegar. Cool to room temperature. Pour over veggies and let cool in refrigerator for at least 2 hours.
