1 lb. ground chicken
1 Tbsp. Olive oil plus some to fry in
2 Tbsp. Tomato Sauce
2 tsp. Dried Basil
1 Tbsp. Minced onion
Kosher salt and freshly ground black pepper
Red pepper flakes to taste
1 C. Panko crumbs
1/2 c. Grated Parmesan cheese
4 rolls
shredded mozzarella cheese

Step1- Mix chicken, oil, sauce and seasonings together. Form the mixture into balls. The texture is gloppy. Flatten into burger patties and dip into the panko and parmesan cheese after mixing together those 2 ingredients together.
Step 2- Put burgers on waxed paper and allow them to sit in fridge for about 30 minutes.
Step 3- Pour a liberal amount of olive oil in a non-stick fry pan. Pan fry burgers until done and crispy. Drain them on a paper towel.
Top burgers with some additional tomato sauce and shredded mozzarella cheese. Broil until cheese melts. Serve on a crispy round roll.
