3-1/2 c. flour
Verenikie dough:
1/2 c. butter, melted
2 eggs
1 c. milk

Cottage Cheese Filling:
2 cartons dry cottage cheese or drained small curd
1 or 2 small eggs
salt and pepper

Directions:
Directions:
Mix all Verenika dough ingredients with electric mixer until smooth. Let rest 15-20 minutes on counter top. Roll thin on floured surface. Cut in circles or squares. For the filling: Mix cheese, eggs, salt and pepper together well. Use your hand to mix together if you can. Fill each dough circle with cottage cheese mixture. Fold in half and pinch ends well. Boil in boiling water (a few at a time). When they float to the surface, remove with a slotted spoon. To serve: fry in Crisco. Add a little cream; simmer a few minutes. Eat and enjoy.

It is not necessary to fry the Verenika. Just add cream to boiled Verenika and enjoy!
