1 cup Ketchup
1 cup Soy Sauce
3/4 cup Brown Sugar
3/4 cup Honey
3/4 cup Sherry
2-4 Tbsp. Sesame Oil
2 or more pieces Ginger Root, peeled & crushed
6 cloves garlic, crushed
Worchestershire sauce to taste
Sriracha or Asian chili paste (or Red Pepper Flakes) to taste
1-2 Lemons juiced or squeezed in

Mix all ingredients together pour over 3 chickens or chicken pieces, marinade at least 30 minutes [I prefer several hours or overnight]; reserve at least a 1-2 cups for brushing on chicken. Grill over hot coals turning chicken often and basting until done.

Huli-Huli means "Turn-Turn" in Hawaiian. This recipe is from Hawaii Magazine and is to copy the recipe made famous by Ernest Morgado of Pacific Poultry Hawaii in 1955.
