3-4 lb CHICKEN
SALT & PEPPER (to taste)
1 ONION (chopped fine)
2 c WATER (hot)
1/2 c WHITE WINE
8 PEPPERCORNS
1/4 tsp MACE (ground)
5 ALLSPICE BERRIES
1 T SAGO FLOUR
2 T VERMICELLI
2 T BUTTER
1 EGG YOLK (Beat)
1 LEMON (juiced)
4 SLICES HAM (cut into pieces)
2 EGGS (hard boiled, sliced)
PUFF PASTRY
1 T MILK

Directions:
Directions:
Cut Chicken into pieces.
Sprinkle Chicken w/Salt & Pepper & Place in a Heavy Saucepan
Add Onion, Hot Water & White Wine to Saucepan
Tie Spices in a Cheesecloth & Add
Simmer Chicken gently until Tender 7 meat falls off the bone
Add Sago, Vermicelli & 1 T Butter (stirring carefully to ensure ingredients do not burn)
Remove Spice Bag & Large Chicken bones

Preheat Oven to 450º
Set 1 T of Egg Yolk aside & mix the rest w/Lemon Juice
Add Egg/Lemon mixture to chicken & stir slowly until thick & creamy & Remove from Heat.

Place Chicken in a Pie Dish w/pieces of Ham and Hard Boiled Egg in between & dot the Meat w/remaining Butter.

Place a Heat Proof Egg cup in the center of the Pie dish to keep the Pastry from sagging.
Brush top of Pie w/reserved Egg Yolk & Milk
Make a few Slits in Pastry to let Steam escape.
