1 lb pork
1 egg white
1 Tbs cornstarch
Pinch of salt
2 Tbs flour

SAUCE:
1 cup sugar
1/3 cup vinegar
3 Tbs cornstarch
1 1/3 cup water
1/3 cup pineapple juice

3 Tbs oil
½ cup carrots, sliced thinly
½ cup sliced onion
1 green pepper, sliced
1 cup pineapple chunks
8 Tbs catsup ( ½ cup)

Directions:

Cut Pork into ¾ in cubes. Mix corn starch, flour, egg and salt. Coat pork with cornstarch mixture. Fry in deep, hot oil until brown.

Combine sauce ingredients and whisk to remove any lumps. Cook over med heat until thickened; stirring constantly. Set aside.

Sauté carrots, onion, and green pepper in oil. Don’t over cook Combine all ingredients and mix in:
1 cup pineapple chunks
8 Tbs catsup ( ½ cup)

Mix thoroughly and serve hot with rice

. I have learned to make this as a one dish meal, except with a lot of mixing bowls. I have stopped “breading” my pork (or chicken). I usually sauté up the pork (or chicken) in a large pot or skillet, remove. Then sauté up the vegetable. While this is cooking, mix the sauce including the catsup. When the vegetable are soft, I add everything back in and cook until the sauce is thick.
