4 eggs
1 cup sugar
1 cup sifted cake flour
1 tsp. baking powder
1/4 tsp. salt
1 tsp. vanilla
1 T melted butter
1 cups whipped cream
Confectioners sugar

Preheat over 350º
Sift together dry ingredients. In bowl of electric mixer, beat eggs until light and thick. Gradually add sugar and continue to beat until light and thick. Gradually add sugar and continue to beat until light and thick. Add dry ingredients. Fold in melted butter and vanilla. Line a jelly roll pan with wax paper. Pour in batter. Bake 20 minutes. While cake is baking, open a dish towel onto counter and cover with confectioners sugar. When cake is baked, unmold onto dishtowel and peel off paper. Cover cake with confectioners sugar and roll up in towel When cooled, carefully unroll and fill with jam, fresh fruit, whipped cream or pie filling. Roll up cake and cover with whipped cream.
