1/2 cup butter, softened
1 1/2 cups bananas, mashed
2 eggs
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 cup buttermilk
1/4 teaspoon salt
1 teaspoon vanilla extract

Directions:

Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.
Combine sugar, butter, bananas, eggs, flour, baking soda, milk, salt and vanilla extract in a large mixing bowl; beat well. Pour batter into prepared pan.
Bake in a preheated oven for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

Preparation:
1. Place a Tablespoon of white vinegar or lemon juice in a liquid measuring cup. 2. Add enough milk to bring the liquid up to the one-cup line.3. Let stand for five minute.
