one 6 to 7 KL turkey(aprox 14 lb)
1/4 cup butter
1 onion quartered
whole celery 4 stocks
2 whole peeled carrots

Take the giblets and neck out of turkey cavity. Place in pot and simmer while bird is roasting.
Stuff a quartered onion, celery sticks and peeled carrot inside of the turkey. Rub skin with butter.
Set up roasting pan with V rack. Place turkey breast side down.
Upside down is the best way to cook all poultry, start out the oven on 500 degrees for the first 20 - 25 minutes, then lower the heat to about 350º - 375 º for the remaining cooking time. this helps to sear and seal in the wonderful juices.
Roast turkey about 20 minutes per lb, until a meat thermometer registers 175° F when inserted into thickest part of the thigh (or when thigh and leg fall easily away when pulled). Remove turkey from oven. Let turkey stand 20 minutes before carving.
Gravy
While turkey is resting drain drippings from bird. Remove giblets and neck from pot and add the drippings. Bring up to boil then turn heat down. Whip together in container 1/2 cup flour and 1/4 cup oil. When mixed well ad to drippings and whip until thickened and smooth.

Cook stuffing in another container in the oven. This insures the turkey will be safely cooked.
