LEMON PIE
1 baked pie shell
1 ¼ cup sugar
6 tblsp cornstarch
2 cups water
1/3 cup lemon juice
3 eggs, separated
3 tblsp butter
1 ½ tsp lemon extract
1 tsp vinegar

MERINGUE
1 tblsp cornstarch
2 tblsp cold water
½ cup boiling water
1 tsp vanilla
½ cup boiling water
3 egg whites
6 tblsp sugar
Pinch of Salt

PIE
Mix sugar & cornstarch together in top of double boiler: Add water; Combine egg yolks with juice & mix: Add to double boiler mixture; Cook until thick over boiling water for 25 minutes; Add lemon extract, butter, vinegar & stir thoroughly; Pour into 9” pie shell & let cool; Cover with meringue & brown in oven.

MERINGUE
Blend cornstarch & cold water in saucepan; Add boiling water & cook, stirring until clear & thickened; Let stand until completely cold; With electric mixer, beat at high speed until egg whites are foamy; Gradually add sugar & beat until stiff; Turn mixer to low & add salt & vanilla: Turn to high & mix well; Spread meringue over pie filling; Bake at 350 about 10 minutes.
