6-8 dark yams
2 sticks softened butter
½ cup brown sugar
2 tblsp honey
½ tsp salt
¼ tsp nutmeg
1 tsp Chinese Five Spices
3 eggs, separated
¼ cup Condensed Milk
1 tblsp Vanilla
2 deep dish pie crusts – bake according to instructions

Directions:
Boil sweet potatoes until tender, peel; Add butter, sugar, honey, egg yolks, milk; Mix in salt, nutmeg & Chinese 5 Spice; whip egg whites till stiff & fold into mixture; Add vanilla; Pour into prepared pie crust shells & bake at 350 for 50-60 minutes, or until done & slightly brown on top.
