3 slices bacon, cooked crisp and crumbled
1/2 cup chopped celery
1/2 green bell pepper, seeded and chopped
1/2 onion, chopped
1/4 pound cubed cooked ham
1/4 pound cubed cooked chicken
1/4 pound cubed smoked sausage
1 (14.5 ounce) can crushed tomatoes, with liquid
1 cup beef broth
1 cup chicken broth
1/2 teaspoon dried thyme
1 tsp worchestor sauce
tobasco sauce to taste
1 teaspoon Cajun seasoning
Louisiana hot sauce to taste
1 cup uncooked white rice
1/4 pound salad shrimp

Heat a large pot over medium-high heat and add bacon, and cook until crisp. Remove bacon pieces. Cook celery, bell pepper, and onion in the bacon drippings.Add the ham, chicken, sausage tomatoes, beef and chicken broth. Season with thyme, Cajun seasoning,Tobasco, Worchestor and Louisiana Hot Sauce. Add rice and bring to a boil. Turn the heat to low, cover, and simmer for about 20 minutes, until the rice is tender.Stir in the shrimp and bacon just before serving, and heat through. If you use uncooked shrimp cook for about 5 minutes. Spice up as hot as you would like.
