2 tbsp vegetable oil
1 cup yellow onion, finely chopped
2 cloves garlic, minced
2 medium size sweet green peppers, finely chopped
1 medium size stalk celery, finely chopped
1½ tsp dried thyme, crumbled
1 tsp ground cumin
¼ tsp each salt and ground red pepper (cayenne) or to taste
3 cups chicken stock or vegetable stock
1½ cups long grain white rice
4 cups cooked black beans

Directions:
In a large heavy bottomed pan, heat the oil over moderately high heat until very hot but not smoking. Add the onion, garlic, half of the green peppers and the celery (if using powdered onion and garlic, just sprinkle over the green peppers.) Saute, stirring frequently, for 7 minutes or until the onions just begin to turn golden. Add the thyme, cumin, salt, cayenne pepper, stock, rice and beans. Bring to a boil over high heat, then lower the heat, cover and simmer for 20 minutes or until the rice has absorbed all of the liquid and is very tender. Serve each portion topped with the remaining chopped green pepper.
