1 c. grated zucchini (unpeeled)
1 c. sugar
1.2 c. margarine
1 egg
2 c. flour
1 tsp baking soda
2 tsp cinnamon
1/2 tsp cloves
1/4 tsp salt
1 c. raisins
1 c. nuts
Directions:
Directions:
Pre-heat oven to 350º. Cream margarine and sugar; beat in egg. Add flour, soda, cinnamon, cloves and salt. Mix well. Stir in zucchini, raisins and nuts. Chill dough for 2 hours. Drop by rounded teaspoons onto greased cookie sheet. Bake for 10 - 12 minutes.
