1/2 Cup Butter
1 Cup boiling water
1/2 tsp. salt
1 Cup sifted flour
4 eggs, beaten

1. Boil water.
2. Add butter and heat until melted.
3. Turn heat to low and add salt and flour all at once and stir vigorously until mixture balls together.
4. Take off heat and add eggs one at a time and beat until smooth. Don't use a mixer! A wooden spoon works best. After adding the last egg, the mixture will have a satin finish.
5. On lightly greased cookie sheet, drop by teaspoonful for smaller puffs or tablespoons for larger ones.
Bake at 400º for 30 minutes for small puffs and 50 for big ones. Watch that the bottoms don't burn.
Unfilled, these freeze well.

This is a no-fail, very simple and very versatile recipe. I cut off the tops and fill them with chicken, ham or tuna salad and put the tops back on. You could also fill them with ice cream and then drizzle on chocolate sauce. Some people will pull out the inside of the puff to make more room for the filling but it's up to you. You could also use a pastry tool and pump in a cream filling.
