3/4 cup sifted all purpose flour
3/4 cup granulated sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
3 cups Brazil nuts (1 pound shelled)
2 packages pitted dates
1 cup well-drained maraschino cherries
3 eggs
1 teaspoon vanilla extract

Directions:

Preheat oven to 300º. Grease and line 9X5X3 loaf pan with waxed paper. Place first four ingredients in sifter. Place nuts, dates, and cherries in large bowl. Sift flour mixture over these. Mix with hands until nuts and fruit are well coated. Beat eggs until foamy; add vanilla. Stir into nut mixture until well mixed. Spred evenly in pan. Bake for 1 hour 45 minutes. Cool on wire rack 15 minutes. Remove from pan. Peel off paper. Cool on rack. Wrap in foil. Store in refrigerator.
